My Favorite Ways to Use Sweet Potatoes

During this crazy time, when most of us are staying home, I want something that will be delicious, support my immune system, and be fun and easy to make. Even better if I already have everything for the recipe in the house!

I'm pretty sure you've heard all the different ways you can use cauliflower -- but did you know sweet potatoes are versatile? There are a few varieties that have a bright orange color and provide tons of beta carotene, as well as vitamin A and C.

They are also work differently in the body from “white potatoes”. Even though they taste sweeter, they have fewer carbs and calories, and a lower glycemic index which won’t give you the blood sugar spikes that you get from white potatoes.

More good news for those who are avoiding foods from the nightshade family, sweet potatoes belong to the morning glory plant family!

Two of my favorite sweet potato hacks are using it for toast and mini pizzas. Here’s a great recipe for “toasting” the sweet potatoes, and how to turn them in to mini pizzas:

Sweet Potato Toast
Ingredients:
Sweet potatoes, Olive oil, Salt, Pepper
Directions:
Preheat your oven to 375˚

Scrub the sweet potato and remove any blemishes and both ends

Carefully slice the sweet potato into 1/2 - 1/3 inch-thick rounds or lengthwise slices (depending on the shape you want for your toast)

Toss the sweet potatoes with a little olive oil and salt and pepper

Lay them in a single layer on a baking sheet and bake for 20 minutes, flip them and bake for roughly 20 more minutes until they are still firm, but soft enough to be pierced by a fork.  If they get too soft you can still top them and eat with a knife and fork.

Move to a plate to cool slightly and top with your favorites. I use avocado, GF hummus, or use them for the pizza recipe below.

Pro Tip: Make enough for leftovers! Store any left-over “toast” in the fridge for up to a week, in an airtight container. To reheat, use your toaster or pop in the oven for a few minutes.

Sweet Potato Pizza
Additional Ingredients:
Pizza sauce, Mozzarella cheese, Sliced olives, Chopped basil, Red pepper flakes, or any other favorite pizza toppings
Directions:
Leaving sweet potato toast on the baking sheet, add a small amount of sauce and your favorite pizza toppings.

Return to the oven and broil for a few minutes until the toppings are hot or the cheese is melted.

Transfer to a plate and enjoy!
