Asian Zoodles Recipe
We are half way through September and I'm not sure where the time has gone. If you're like me, you've been busy with something every day. Life is full (sometimes too full). Still, wasn't it just the beginning of July?
Even though I don't have kids, I am feeling the call of "back to school" time here in Seattle. There is something about this time of year that gives me a surge of energy.
I get inspired to revisit good habits that I may have set aside for the summer. This year, more than ever before, it is important to take care of ourselves and stay healthy as we head into colder weather and close quarters.
My thoughts turn to cozy meals and how to use all of the wonderful fresh produce that's available in my garden and in the stores.
In my garden I just found a giant zucchini. It was hiding under the leaves, happily growing until it was the size of a small car. It's waaay too big to fit in my veggie drawer, so I have created a fun way to make a side dish that is easy and delicious.
If you don't have a garden, and if your neighbors haven't been leaving midnight piles of zucchini on your porch, prices for organic zucchini are low right now at your local stores.
Here is a recipe and video for yummy Asian Zoodles:
3 Zucchini, Spiralized (or chopped)
1 Dry onion sliced
½ c Coconut aminos or GlF Tamari
1 Tablespoon sriracha
1 Tablespoon dried ginger powder or 2 teaspoons fresh grated ginger
Toasted sesame oil
Heat a pan over medium low heat and add one teaspoon avocado/olive/sunflower oil
Add sliced onions. Stir and cook until the onions start to soften
Turn up the heat to medium-high and add remaining ingredients
Stir and cook for approximately 10-15 minutes until zucchini is cooked to your preference.
Drizzle with a little toasted sesame oil an toss.
Transfer mixture to serving dish and sprinkle with sesame seeds. Enjoy!
